Watermelon Feta Salad

Chef Lonny’s Black Box Challenge # 2

A light, fresh simple salad to bring us into summer. This watermelon feta salad finds the perfect balance between savoury and sweet.

Ingredients

  • Watermelon
  • Feta
  • Mint
  • Sugar
  • Salt and pepper
  • A splash of fruit juice

Instructions 

Start by finely chopping mint, place in bowl, add in a little sugar.

Cube watermelon, into sugar cube sized pieces. Add to bowl.

Add a pinch of finely ground black pepper.

  • (not from a pepper mill, it needs to be fine)

Add a splash of some kind of juice,

  • (orange, apple, cranberry etc).

Gently mix, don’t over mix, add in crumbled feta.

Less than you think. It’s important not to add to much. Start with a little, maybe add a little more. The idea is, it’s a sweet fruit dish with a bit of savoury. You can over power the watermelon very easily with any of the ingredients and that not the point, it’s a watermelon and feta salad.

 Easy on the mint, the feta and the black pepper, they all have a role, but it’s a seasoning role, not a flavouring role. Great salad any meal of the day, It would be lovely with baby shrimp mixed in.

A very nice and comfy room. Breakfast, prepared by Lonny, the owner and chef, was fantastic. Lonny is also a first-rate tour guide. We visited the Banff, Lake Louise, and icefield areas while staying here, and mostly followed daily activities recommended by Lonny.
